Sambal Terasi (or sambal belacan) is a popular and very traditional Indonesian chili sauce made from a hot bird chillies, shallots, garlic, tomato, palm sugar, and most importantly, Terasi and Kafir Lime to add special flavour. Terasi/belacan/shrimp paste is a block of fermented shrimps with dark chocolate colour and quite naturally very sticky and pungent.
